This recipe is from my cookbook “The OutbackChef” New Holland Publishers This dressing makes quite a bit, store in fridge and use over a simple green salad with a sprinkling of Bush Dukkah
12 Fresh Oysters
4 Finger Limes cut in half with the caviar squeezed out
Ingredients for Dressing
1/2 cup fresh coriander leaves, finely chopped
1/4 cup sweet chilli dressing
1/2 teaspoon salt
1/4 cup fish sauce
2 teaspoons palm sugar
1/2 cup fresh lime juice
1/2 teaspoon River Mint

Combine all ingredients for dressing and shake in a jar to combine

Pour a little dressing over each oyster and top with come Finger Lime Caviar
